Spicy Caribbean Chicken Skewers

Originating from the vibrant Caribbean islands, Spicy Caribbean Chicken Skewers reflect the region's love for bold flavors and fresh ingredients. Traditionally enjoyed at festive gatherings and beach barbecues, these skewers are a celebration of the diverse culinary influences found in Caribbean cuisine. Today, they are popular worldwide, often featured in summer cookouts and tropical-themed parties.
Combine orange juice, lemon juice, rum, soy sauce, ginger, bird’s eye chillies, crushed peppercorns, salt, garlic, fennel seeds and vinegar in a bowl and mix.
Add chicken and mix well. Refrigerate to marinate for 2 hours.
Preheat an electric griller and grease with some oil.
Skewer marinated chicken cubes onto individual satay sticks and reserve the leftover marinade for basting.
Place the skewers on preheated griller and grill till golden from all sides and chicken is fully cooked, basting with the reserved marinade and some oil.
Serve hot garnished with spring onion greens.
