Trim and wash chicken feet, removing nails and any debris, and soak in lemon water.

Heat 1 tablespoon of vegetable oil in a large pot over medium-high heat.

Add minced garlic, fresh ground black pepper, fresh thyme (on the twigs), and 1 chopped scallion, stirring for about 1 minute.
