Asian Inspired Ceviche

Ceviche, traditionally a Latin American dish, has found a unique twist in Asian cuisine, blending fresh fish with flavors like soy sauce and sesame oil. This fusion celebrates the freshness of seafood while incorporating vibrant Asian ingredients, making it a refreshing appetizer. Today, variations of ceviche are popular worldwide, showcasing the versatility of this dish across different culinary traditions.

Peel and cut up two mangoes into flat pieces, then dice them.
Slice jicama into planks, then into french fries, and dice.
Peel and chop a two-inch piece of daikon radish into small pieces.
Chop three red radishes into small pieces.
Zest a lime to get about a tablespoon of zest, then juice enough limes to get one cup of lime juice.
Chop six green onions into thin slices, using both white and green parts.
Add 1/4 cup of ginger to the bowl.
Remove seeds from two shishito peppers and one jalapeño, slice thin, and dice before adding to the bowl.
Cook squid for three minutes in boiling water, then place in an ice bath and drain.
Add one cup of lime juice and 1/2 cup of orange juice to the bowl, stir to combine.
Add one teaspoon of salt and black pepper to taste, stir again.
Add about a tablespoon of cilantro to the bowl, stir to combine.
Cut cucumbers into thick slices or on a bias for serving.
After 20 minutes, add an additional 1/2 cup of ginger, 2 tablespoons of rice wine vinegar, and 1/2 teaspoon of sugar to the mixture, taste and adjust ginger flavor as needed.
Refrigerate for at least 3 hours before serving.
