Preheat the oven to 400°F (204°C).
In a skillet, brown 1 pound of breakfast sausage, breaking it up as it cooks until browned, about 5-7 minutes. Drain excess fat on a paper towel.
In a mixing bowl, combine 2 cups of all-purpose flour, 1/3 cup of sugar, 3 teaspoons of baking powder, and 1/2 teaspoon of salt; whisk together until well incorporated.
In a separate bowl, scramble 5 eggs in a skillet with 1 tablespoon of butter until fully cooked, with no liquid remaining.
Add the scrambled eggs to the dry mixture.
In the same bowl, add 2 eggs (not scrambled), 1/2 cup of milk, and 1/2 cup of oil to the dry mixture and mix until combined.
Fold in 2/3 cup of shredded cheese into the batter.
Add the browned sausage to the batter and mix until evenly distributed.
Spoon the mixture into a greased muffin tin, filling each cup about 3/4 full.
Sprinkle the remaining 1/3 cup of shredded cheese on top of the muffins.
Bake in the preheated oven for 20-25 minutes, or until muffins are set and golden on top.
Remove from the oven and let cool for a few minutes before removing from the tin.
