Acorn Squash Soup

2 ½ cups vegetable broth
¼ cup unsweetened light coconut milk
2 teaspoons apple cider vinegar
1 acorn squash (550 g), halved, seeded
1 small shallot (25 g), peeled, halved
2 garlic cloves (8 g), peeled
2 pitted dates (20 g) or 1 teaspoon maple syrup
½ teaspoon ground cinnamon
1 pinch ground nutmeg
¼ teaspoon salt (optional)

To roast the acorn squash, place flesh side down on a parchment-lined baking pan.

Roast at 375°F (190°C) for 30–35 minutes, or until flesh is tender.

Add the shallot and garlic cloves to the baking pan during the last 10 minutes in the oven.

Once cool enough to handle, peel the skin off the roasted squash.

Place all ingredients into the Vitamix container in the order listed and secure the lid.

Run the Hot Soup Program or start the blender on its lowest speed, then quickly increase to its highest speed.

Blend for 5 minutes 45 seconds.
