Cornflake and Herb Crusted White Fish with Bell Pepper Sauce

- ●4 fillets white fish (such as cod or tilapia)

Instructions
- 1Preheat the oven to 400°F (200°C).
- 2In a shallow dish, combine crushed cornflakes, breadcrumbs, parsley, dill, salt, pepper, and garlic powder.
- 3In another shallow dish, place the flour. In a third dish, beat the eggs.
- 4Dredge each fish fillet in flour, then dip into the beaten eggs, and finally coat with the cornflake mixture, pressing gently to adhere.
- 5Heat olive oil in a large oven-safe skillet over medium heat. Add the coated fish fillets and cook for 2-3 minutes on each side until golden brown.
- 6Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the fish is cooked through and flakes easily with a fork.
- 7While the fish is baking, prepare the bell pepper sauce. In a saucepan, heat a little olive oil over medium heat and sauté the onion and garlic until translucent.
- 8Add the diced red and yellow bell peppers and cook for another 5 minutes until softened.
- 9Pour in the vegetable broth and lemon juice, and simmer for 5-7 minutes until the sauce thickens slightly. Season with salt and pepper to taste.
- 10Once the fish is done, remove it from the oven and serve hot with the bell pepper sauce drizzled over the top.

- 11In a small bowl, whisk together olive oil, balsamic vinegar, lemon juice, honey, salt, and pepper.
