Combine 100g cake flour and 100g all-purpose flour in a bowl.
Add 65g sugar, 4g salt, and 5g baking powder to the flour mixture and mix well.
In another bowl, whisk together 170g milk, 100g eggs, and 80g melted unsalted butter.
Add 1 tsp vanilla extract to the wet ingredients and mix until combined.
Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
Grease the waffle iron with oil or butter.
Preheat the waffle iron over medium heat.
Pour the batter onto the center of the waffle iron, using enough to cover the surface without overflowing.
Close the lid and cook until the waffles are golden brown and crisp, about 5 minutes.
Carefully remove the waffle and repeat with the remaining batter.
Serve warm topped with maple syrup, optional whipped cream mixed with 10g sugar, and a dusting of powdered sugar.
