1

Cut 3 pieces of chicken into 4 pieces each.

2

Add 2 tablespoons of tandoori masala and 1 tablespoon of biryani masala to the chicken.

3

Squeeze juice from 3 oranges into the chicken mixture.

4

Add 1 tub of yogurt to the chicken and mix well.

5

Add ginger-garlic paste and mix thoroughly to marinate the chicken evenly.

6

Cover the marinated chicken with cling film and let it rest for 1 hour.

7

Heat ghee in a frying pan and start frying the marinated chicken until it has a proper barbecue look.

8

In the same oil, fry 4 chopped onions until golden brown.

9

Add 2 tablespoons of ginger-garlic paste to the fried onions.

10

Prepare the biryani masala by adding chopped tomatoes and the leftover marinade from the chicken.

11

Add half a tub of yogurt to the mixture for flavor.

12

Transfer the fried chicken into the pot with the masala.

13

Cover the pot with a pressure cooker lid and cook for 2 minutes once it starts to whistle, then turn off the heat.

14

In another pot, prepare water for boiling the rice with spices (black cardamom, cloves, black pepper, bay leaves, salt, cumin).

15

Once the water is boiling, add the rice and cook until done.

16

Add 100 grams of yogurt to the boiling rice for flavor and to keep the rice intact.

17

Remove the chicken from the pot and layer it in a separate dish.

18

Layer the cooked rice over the chicken in the pot, then add the gravy from the chicken, fried onions, coriander, milk, and kewra water.

19

Cover the pot with cling film and let it cook on low heat for 8-10 minutes.

20

After cooking, uncover the pot and serve the biryani, ensuring the chicken is tender and juicy.
