1 cup walnuts
1 cup pecans
2 cups rolled oats
1/2 cup pumpkin seeds
1/2 cup hemp seeds
1/4 cup chia seeds
1/4 cup ground flax
1/2 tsp salt
1/2 tsp cinnamon
1/4 cup olive oil
1/2 cup maple syrup
1/4 cup coconut sugar

Line a large baking sheet with parchment paper.

Roughly chop walnuts and pecans.

In a large bowl, add rolled oats, chopped nuts, and the rest of the dry ingredients: pumpkin seeds, hemp seeds, chia seeds, ground flax, salt, and cinnamon. Mix everything well.

In a medium-sized pot, add good quality olive oil, maple syrup, and coconut sugar.

Dissolve the coconut sugar on medium heat for about 3 to 4 minutes. Check if it feels grainy between your fingertips; if not, it's ready.

Coat all of your dry ingredients with the wet ingredients, ensuring everything is well coated.

Spread the granola mixture out in an even layer on the baking sheet.

Bake at 300°F for approximately 40 minutes, stirring gently every 15 minutes until the granola is golden brown and dry.

Once completely cooled, the granola should sound crunchy.
