2 dried shiitake mushrooms
1/2 onion
1/2 zucchini
1 small carrot
1/4 cup soy sauce
1/2 tbsp salt
1/2 stalk green onion
1 jalapeno
soy sauce to cover green onion and jalapeno
1 tbsp gochugaru
1/2 tbsp minced garlic
1/2 sesame oil
1 tsp brown sugar
1 tbsp crushed sesame seeds
optional garnish sliced roasted seaweed

Soak dried mushrooms in water for 30 minutes or while prepping other ingredients.

Thinly slice onion.

Julienne zucchini and carrot.

Dice jalapeno.

Combine green onion and jalapeno in a bowl. Cover with enough soy sauce to lightly cover ingredients.

Add gochugaru, minced garlic, sesame oil & brown sugar. Optionally crush sesame seeds in mortar and pestle and add into sauce.

Stir well and set aside.

Heat pot to medium-high while also boiling another pot of water for noodles.

Cook noodles for 2 minutes or per package directions. When done, drain and rinse well.

Add oil to pot and lightly sauté vegetables. Add water.

Let come to boil and add soy sauce and salt.

Assemble bowl by putting noodles first, and then ladling soup on top. Then garnish with seasoned soy sauce.
