Start by combining 1/2 cup unsalted butter, 1/2 cup water, 1/2 cup whole milk, 1 teaspoon sugar, and 1/2 teaspoon salt in a saucepan.
Bring the mixture to a boil over medium heat, stirring frequently.
Remove from heat and add in 1 cup of all-purpose flour; mix until well combined.
Change the temperature to low heat and continue cooking the paste for approximately 1-2 minutes, stirring continuously.
Once a thin film starts to form in the bottom of the pan or the dough turns into a smooth ball, transfer to a mixing bowl.
Using a paddle attachment, mix on medium speed to cool the paste until the side of the bowl feels warm.
Turn to medium low and add 4 large eggs one at a time, waiting for each to incorporate before adding the next.
Prepare a pastry bag with a large open star tip and fill it halfway with the batter, twisting to seal.
Place a large pot over medium heat and add about 2 inches of canola oil, heating it between 350 to 375 degrees Fahrenheit.
Pipe the dough a few inches above the oil and cut the ends off with scissors.
Fry until the side touching the oil is golden brown and crispy, then turn with tongs to fry the other side.
Remove the churros from the oil and continue with the rest of the batter.
Mix 1/2 cup granulated sugar and 1 tablespoon ground cinnamon in a bowl.
Toss each churro in the cinnamon sugar mixture until fully coated.
To make a salted chocolate sauce, bring 1/2 cup heavy cream to a boil over medium heat, then remove from heat and pour over 1/2 cup semi-sweet chocolate chips and 1/4 teaspoon kosher salt, whisking until smooth.
For the salted vanilla sauce, prepare an ice bath in a large bowl with ice and 1.5 cups of water.
In a medium bowl, place a fine strainer over it and set aside.
Bring 1/2 cup whole milk, 1/2 cup heavy cream, and 1/4 teaspoon salt to a boil over medium heat.
In a separate bowl, mix 3 tablespoons sugar with 3 egg yolks and whisk to combine.
Temper the yolks by slowly pouring a thin stream of the hot milk into the yolks while whisking vigorously.
Once the yolks are warmed, return the milk to medium low heat and add the yolk mixture while whisking vigorously.
Continue cooking and whisking for approximately 3-4 minutes until the sauce thickens and coats the back of a spoon.
Strain the sauce over the medium bowl in the ice bath to cool it quickly, then mix in 1/2 teaspoon vanilla extract.
