Prepare 3 kg of tomatoes and 1 kg of onion for the ketchup.

Chop the tomatoes and onion into small pieces.

Combine chopped tomatoes and onion in a pot.

Add 5 teaspoons of salt to the pot and bring to a boil, allowing to simmer for 1 hour to evaporate moisture.

Add 800 g of chopped onion to the mixture.

Add 1.5 cups of sugar and 1/2 teaspoon of black pepper to the pot.

Add 1/2 teaspoon of cinnamon and any other spices desired.

Simmer the mixture, stirring occasionally, until it thickens, without covering the pot.

Blend the mixture using a blender until smooth, transferring back and forth if necessary.

Pour the blended ketchup into jars and let them cool.
