1

Start with one block of soft tofu, cutting the tab off the box with scissors and being mindful of any liquid that may come out.

2

In a food processor or good blender, add the soft tofu and blend it on its own until smooth.

3

In a microwave-safe bowl, combine 3/4 cup mini chocolate chips, 3 tablespoons of water, and 3 tablespoons of cocoa powder.

4

Mix the chocolate chips and cocoa powder with water until it looks dry and powdery, then microwave for 30 seconds.

5

Stir the mixture and microwave for another 30 seconds, repeating until the chocolate is smooth and melted, being careful not to overheat it.

6

Add the melted chocolate to the blended tofu in the food processor.

7

To the mixture, add 2 to 3 tablespoons of powdered sugar, 1 teaspoon of vanilla extract (optional), and 1/2 teaspoon of ground cinnamon.

8

Blend the mixture until smooth for about 1 to 2 minutes, until it has a nice chocolate consistency, which will be a little runny.

9

Pour the mousse into individual containers like Mason jars or a larger container for chilling.

10

Refrigerate for a while to thicken up before serving.
