Pho

Cultural Context

Pho originated in the early 20th century in northern Vietnam, evolving from a fusion of French and Vietnamese culinary traditions. Traditionally enjoyed as a breakfast dish, it has become a symbol of Vietnamese cuisine, celebrated for its fragrant broth and fresh herbs. Today, pho is enjoyed worldwide, with regional variations emerging, including vegetarian versions and different protein options.

1

Fill a pan halfway with water and turn on the fire.

2

Clean the chicken by removing fat and washing it with salt and water a couple of times.

3

Once the water is boiling, add the chicken and cook for about 2 minutes, flipping it over halfway through.

4

Remove the chicken and let it rest, then add more water to cover the chicken and boil it again for 5-8 minutes depending on the size of the chicken.

5

Add half a teaspoon of salt and chicken powder to the water while boiling the chicken.

6

Continue to clean off any impurities that rise to the surface while boiling the chicken.

7

After boiling, remove the chicken and wash it again.

8

Add beef bones to the pot and cover with water, cooking for a couple of minutes to extract the marrow.

9

Check the chicken to ensure it is cooked, then remove it from the pot and set aside.

10

Add the beef bones back into the pot and cover with water, letting it boil and simmer for about 3 hours, skimming off any fat that rises to the surface.

11

After about 1.5 hours, remove the brisket from the broth and cover it with foil to keep it warm.

12

Prepare the vegetables: wash and cut bean sprouts, cilantro, basil, onion, and lime.

13

Boil water in a separate pot and add pho noodles, cooking for about 15 seconds.

14

Assemble the pho by placing noodles in a bowl, adding the cooked meat, and topping with bean sprouts, cilantro, basil, lime, and sauces.
