Spicy Veg Hakka Noodles

Boil water in a wok and add salt and a little oil.
Add noodles to the boiling water, breaking them slightly, and cook for 10 minutes until done.
Drain the noodles in a strainer.
In the same wok, heat some oil and fry finely chopped garlic until golden brown and crispy, stirring constantly.
Remove the fried garlic and set aside.
In the same oil, add 5-6 more chopped garlic cloves and 2-3 chopped green chilies, sautéing briefly.
Add 3/4 cup chopped white onion, 1 cup chopped bell pepper, 1 cup chopped green spring onions, and 1 cup shredded cabbage, mixing well.
Cook the vegetables until they are soft but not overcooked.
Add 1 teaspoon vinegar, 2 teaspoons soy sauce, 1 teaspoon red chili sauce, 1 teaspoon tomato sauce, and salt to taste, mixing everything together.
Add the boiled noodles and 1 teaspoon black pepper, mixing well to combine.
Toss the noodles well to mix everything together and add the reserved fried garlic and spring onion greens on top.
