Cut 500 grams of boneless chicken into small pieces.
Add 1/2 teaspoon salt, 1/2 teaspoon white pepper powder, 1/2 tablespoon ginger-garlic paste, 2 tablespoons soy sauce, 1 egg white, and 1/2 teaspoon baking powder to the chicken and mix well.
Let the chicken marinate for 15 minutes.
After marinating, add 1/2 cup all-purpose flour and 1/2 cup corn flour to the chicken mixture, along with 1/2 tablespoon oil, and mix well. If the mixture is too thick, add 1/4 cup water to achieve a coating consistency.
Heat oil in a pan over medium-low heat and fry the chicken pieces in batches, ensuring not to overcrowd the pan.
Fry the chicken until it is slightly crispy, then turn to cook evenly on both sides.
In a separate bowl, mix 1.5 cups chicken stock, 4 tablespoons soy sauce, 2-3 tablespoons tomato ketchup, 1/4 teaspoon brown sugar, and 1 tablespoon cornstarch until well combined.
In a pan, heat 1-2 tablespoons oil and add 1/2 tablespoon garlic paste; sauté until fragrant.
Add 2 tablespoons chopped green onions and sauté briefly before adding the prepared sauce mixture.
Cook the sauce over medium heat, stirring continuously until it thickens.
Once thickened, add the fried chicken to the sauce and mix well, cooking for an additional 2-3 minutes.
Turn off the heat and add 1/2 tablespoon sesame oil and 2-3 tablespoons chopped green onions, mixing well before serving.
