Originating from the Dutch settlers in South Africa, Vetkoek translates to 'fat cake' and is a beloved street food in Namibia. Traditionally enjoyed as a snack or meal, it symbolizes community and sharing, often filled with various savory fillings. 1

Add 2 tablespoons flour (from 250 g), yeast and sugar to lukewarm water. Stir well and let the mixture stand for 10 minutes.

2

In a large bowl add the remaining flour, nutmeg, and salt and combine well. After 10 minutes pour the yeast mixture to the flour-salt mixture. Combine until you have a smooth dough.

3

Transfer the dough to a lightly floured working surface. Dust the dough with flour and grease your hands with oil to knead for about 5 minutes.

4

Put the dough in a greased bowl, apply a few drops of oil on top, cover with a kitchen cloth, and let rise for about 60 minutes until doubled in size.

5

Peel and mince garlic and onion, and dice bell peppers. Heat about 2 tablespoons sunflower oil in a large pan over medium heat. Add onion, garlic, and bell peppers, cooking for about 5 minutes.

6

Add ground beef and cook until browned. Stir in tomato paste, thyme, paprika, curry, sugar, salt, ground black pepper, and chili flakes, mixing well.

7

Add hot water and bring to a boil. Cover and let cook for about 15 minutes until the sauce thickens, stirring occasionally and adding water if necessary. Remove from heat.

8

After 1 hour, place the dough on a lightly oiled surface, divide into 5 equal pieces, and shape each into a ball. Cover and let rise for another 20 minutes.

9

Heat oil in a large skillet over medium heat. To check if the oil is ready, insert a wooden spoon handle; if bubbles form, it's hot enough. Carefully drop in the dough balls and fry for about 10 minutes, turning halfway.

10

Place the fried fat cakes on a cooling rack lined with paper towels to remove excess oil. Once cool enough to handle, cut them partially open, fill with cheese and mince sauce, and enjoy.
