The éclair, a classic French pastry, is known for its light choux pastry filled with cream and topped with chocolate. Traditionally enjoyed as a dessert or snack, it has become a beloved treat worldwide, often found in bakeries and cafes. In South Korea, variations may include unique fillings like matcha or sweet red bean, reflecting local tastes.

Greek yogurt reduces calories while maintaining creaminess
To make the diplomat cream, combine yolks, sugar, cornstarch, and vanilla extract in a saucepan. Gradually add hot milk while mixing. Heat over medium until thickened, then remove from heat and mix in butter. Transfer to a bowl, cover with plastic wrap, and chill in the refrigerator.
Whip heavy cream with sugar until about 70% whipped.
Sift the custard cream into the whipped cream and mix well.
To make the eclair dough, combine butter, sugar, salt, water, and milk in a saucepan. Bring to a boil until butter melts, then remove from heat and stir in cake flour until combined.
Return to medium-low heat and cook for about 2 minutes until the bottom shows signs of sticking.
Transfer the dough to another bowl and let it cool slightly. Add eggs in three batches, mixing well after each addition.
Pipe the dough onto a baking sheet using a piping bag with a star tip.
Bake in a preheated oven at 180°C for 15 minutes, then at 160°C for 25 minutes for a total of 40 minutes.
Once cooled, fill the eclairs with cream and top as desired.
