1

Cut the tops off the leeks, using only the white and light green parts.

2

Slice the leeks into rings.

3

Place the sliced leeks in a large bowl of water to wash them, pushing them down to remove dirt.

4

Run the leeks through a kitchen strainer to drain them.

5

Cut the tops and bottoms off the carrots, then peel them.

6

Cut the carrots in half lengthwise, then slice them at an angle into half-inch pieces.

7

Add the sliced carrots to the bowl with the strained leeks.

8

Peel one medium potato and cut it in half.

9

Depending on the size, cut the potato into two or three lengthwise pieces and then into chunks.

10

Add the potato chunks to the bowl with the leeks and carrots.

11

Add about 1 tablespoon of olive oil to the bowl, along with salt and black pepper.

12

Toss everything together to coat.

13

Cut the sausages into bite-sized pieces, optionally freezing them for about an hour before cutting for easier handling.

14

Add the sausage pieces to the bowl with the vegetables and give everything a final toss.

15

Spray the bottom of a 9x13 baking dish with non-stick cooking spray and add the mixture to the dish, spreading it out evenly.

16

Wrap the baking dish with foil.

17

Cook in a preheated oven at 400°F for about 30 minutes.

18

Remove the foil and return the dish to the oven for another 20 to 30 minutes until the sausages are golden brown.
