Ingredients

  • 2 ripe mangoes

Instructions

  1. 1Peel the mangoes and slice them thinly.
  2. 2In a saucepan, combine the vinegar, sugar, water, and salt. Heat over medium heat until the sugar dissolves.
  3. 3Add the red chili flakes, turmeric powder, and mustard seeds to the mixture. Stir well.
  4. 4Bring the mixture to a boil, then remove from heat and let it cool slightly.
  5. 5Place the sliced mangoes in a clean jar or container.
  6. 6Pour the vinegar mixture over the mango slices, ensuring they are fully submerged.
  7. 7Seal the jar tightly and let it sit at room temperature for 1-2 hours.
  8. 8Refrigerate the pickled mango for at least 24 hours before consuming for best flavor.
  9. 9Serve as a condiment or side dish with your favorite meals.

  • 4 whole quails, cleaned and dressed
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper
  • Vegetable oil for frying

Instructions

  1. 1In a bowl, soak the cleaned quails in buttermilk for at least 2 hours, or overnight in the refrigerator for best results.
  2. 2In a separate bowl, mix together the flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.
  3. 3Remove the quails from the buttermilk, allowing excess to drip off, and dredge them in the seasoned flour mixture until fully coated.
  4. 4Heat vegetable oil in a deep fryer or a large pot to 350°F (175°C).
  5. 5Carefully place the coated quails in the hot oil, frying in batches if necessary to avoid overcrowding.
  6. 6Fry the quails for about 4-5 minutes on each side, or until golden brown and cooked through.
  7. 7Use a slotted spoon to remove the quails from the oil and drain on paper towels.
  8. 8Let the quails rest for a few minutes before serving.
