Cinnamon Apple Overnight Oats

1 Granny Smith apple
1 tablespoon butter (or coconut oil for dairy-free)
1 cup old-fashioned oats
1 tablespoon flax meal
2 cups unsweetened almond milk
1 teaspoon cinnamon
1 teaspoon vanilla extract
maple syrup or honey (to taste)

Chop up a Granny Smith apple into small pieces.

Melt about 1 tablespoon of butter in a pan over medium heat.

Add the chopped apples to the pan.

Sprinkle in cinnamon and vanilla extract with the apples in the pan.

While the apples cook down, prepare four 8-ounce jars for the overnight oats.

Fill the jars with 1 cup of old-fashioned oats each.

Add a tablespoon of flax meal to each jar.

Stir the oats and flax meal together in the jars.

Pour 1/2 cup of unsweetened almond milk into each jar.

Once the apples are soft, turn off the heat and drizzle maple syrup or honey over the apples.

Spoon about a fourth of the cooked apple mixture into each jar with oats.

Mix the oats and apples together in each jar to combine.

Place lids on the jars and refrigerate overnight for 6 to 8 hours.
