1

Preheat the oven to 350°F.

2

Cube 1/2 cup of cold butter.

3

Core and cut 2 apples in half.

4

Remove the neck and giblets from the turkey.

5

Gently loosen the skin on the turkey breast.

6

Insert the pieces of butter between the skin and the breast meat.

7

Place the apples inside the turkey's main cavity.

8

Tie the legs together with kitchen twine.

9

Tuck the wing tips under the breast.

10

Sprinkle the outside of the turkey with 1 tablespoon of garlic powder, and season with salt and black pepper to taste.

11

Place the turkey in a roasting bag.

12

Place the bagged turkey in a roasting pan with the bag still open.

13

Pour 2/3 of a bottle of champagne over the outside and inside of the bird, keeping the champagne within the roasting bag.

14

Seal the roasting bag.

15

Cut 2 or 3 slits into the upper part of the bag so that the steam can escape.

16

Bake the turkey in the preheated oven for 3 to 3 1/2 hours, or until the internal temperature of the bird in the thickest part of the thigh is 180°F.

17

Remove the turkey from the bag and let it rest for at least 20 minutes before carving.

18

Optionally, crisp up the skin by removing the roasting bag during the last 15 to 20 minutes of cooking time.
