Traditionally made with fava beans, it symbolizes sustenance and community, frequently served at family gatherings or during Ramadan. Today, variations exist across the Middle East, with many adding toppings like eggs or spices, showcasing its adaptability and enduring popularity.

Chop a medium onion.
Heat garlic infused olive oil in a skillet and sauté the onions until they sweat.
Chop 4 cloves of garlic and add to the onions, mixing well.
Chop spring onions and add them to the skillet.
Add 1/2 cup of crushed tomatoes, cumin, paprika, pepper, and salt to the mixture and mix well.
Add canned fava beans to the skillet, keeping the starchy liquid from the can.
Cover and allow to cook.
Boil 2 eggs while the fava beans are cooking.
Prepare a Middle Eastern chopped salad with tomato, cucumber, and chopped parsley, adding lemon juice, salt, pepper, and olive oil.
Make homemade tahina by mixing 3/4 cup of tahina with the juice of half a lemon, 2 tablespoons of extra virgin olive oil, pepper, and salt, then add water to reach desired consistency.
Crush some of the fava beans partially, leaving some whole.
Peel the boiled eggs and add them to the fava bean mixture, adding water and turning the eggs over occasionally.
