4 cups water
1 teaspoon cumin
1 teaspoon salt
1 medium onion
1 green chili
2 cloves garlic
2 tablespoons lemon juice
3 tablespoons olive oil
1 medium tomato
2 hard-boiled eggs
2 pieces pita bread

Soak fava beans overnight and then cook them in water until tender.

Boil hardboiled eggs for 7 minutes.

In a pan over high heat, add cooked fava beans and about 1 cup of water, cooking until they can be mashed.

Add about 1 tablespoon of cumin and a big pinch of salt to the beans while cooking.

Dice an onion finely, adding most of it to a bowl and saving some for garnish.

Pound 3 cloves of garlic and a green chili with a pinch of salt into a smooth paste.

Add the garlic and chili paste to the bowl with the diced onion.

Add the juice of 2 lemons (removing seeds if possible) and about 3 tablespoons of olive oil to the onion mixture, mixing well.

Mash the fava beans to the desired consistency, either chunky or smooth.

Fold the onion mixture into the mashed fava beans evenly.

Prepare diced tomatoes for garnish, optionally removing seeds.

Plate the fava bean mixture, garnishing with the reserved onion, diced tomatoes, and a drizzle of olive oil.
