Cut 4 boneless chicken breasts into thin strips or cubes.
Marinate chicken with 1/3 teaspoon salt, 1/3 teaspoon chicken stock powder, 1/4 teaspoon black pepper, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1 egg white, and 2 tablespoons cornstarch for about 30 minutes.
Heat 3 tablespoons of vegetable oil in a deep pan until hot.
Fry the marinated chicken pieces in the hot oil on medium flame until they are slightly crispy and golden, then remove from oil.
In a wok, heat more oil and sauté 1 tablespoon minced garlic and 1 inch minced ginger until fragrant.
Add homemade chicken stock (or chicken cube dissolved in water) to the wok.
Stir in 2 tablespoons lemon juice and season with salt and black pepper to taste.
Bring the mixture to a boil for 1-2 minutes on medium flame.
Prepare a slurry by mixing 1 tablespoon cornstarch with 1/2 cup water, then gradually add it to the boiling mixture until desired thickness is reached.
Add 2 tablespoons honey to the sauce and mix well.
Add the fried chicken to the sauce, coating it thoroughly.
Add chopped scallions (both green and white parts) and an additional 1 teaspoon honey if desired, mix well.
Serve hot with boiled rice, egg fried rice, or garlic butter rice.
