Peel and mince the garlic until fine.
Peel the onion and chop into small pieces.
Finely chop a handful of fresh parsley.
Finely chop half the bacon into small pieces.

Transfer the mixture to a bowl and set aside to cool.
Using a sharp knife, carefully remove the top of the cob loaf to create a lid and set aside.
Cut out the interior of the cob loaf, ensuring the walls remain thick enough.
Tear or cut the scooped out bread into large pieces and set aside for serving.
Wrap one rasher of bacon around the side of the cob loaf, overlapping slightly, and tuck the ends underneath.
Place the bacon wrapped cob on a lined baking tray and brush lightly with syrup.
Bake in a preheated oven for 20 minutes or until the bacon is golden and crisp.
Add cream cheese, sour cream, and chopped parsley to the cooled bacon mixture and stir until smooth.
Remove the bacon wrapped cob from the oven and spoon the filling into the hollowed loaf.
Brush the bacon rashes with syrup once more.
Place the chopped bread pieces on a baking tray and return the lid to the top.
Lightly spray with oil and brush with syrup.
Reduce the oven temperature to 160°C and bake the prepared bread pieces for 20 minutes or until golden and crispy.
