1 tsp sugar
1 tsp dried active yeast
1 tbsp light soy sauce
a few drops of dark soy sauce
1/8 tsp salt
1 tbsp shaoxing cooking wine
1/4 tsp sugar
2 tbsp sesame oil
2 tsp potato starch
1 pinch white pepper
1 tsp oyster sauce
1 tbsp chopped green onion
1 tsp chopped ginger
1/2 cup water
350g ground pork

For the dough, dissolve sugar into warm water and mix in dried active yeast and set aside until foamy.

For the filling, combine all the ingredients listed into a bowl, adding water last. Mix until well combined.

Roll each piece of dough into a ball, press down with your palm and roll with a rolling pin into thinner circles.

Take a spoonful of filling and place in the center of each circle, holding and turning with one hand and pinching with the other.

Place buns into the bamboo steamer and rest on top of a wok filled with warm water for 25 mins, then steam for 15 mins.
