Leg of Lamb with Goat's Cheese and Mint

Preheat the oven to 375°F (190°C).
Pat the leg of lamb dry with paper towels and season generously with salt and black pepper.
Make small incisions in the lamb and insert slivers of garlic and sprigs of rosemary.
Heat olive oil in a large skillet over medium-high heat until shimmering.
Sear the lamb on all sides until browned, about 3-4 minutes per side.
Transfer the lamb to a roasting pan and surround it with chopped onions, carrots, and potatoes.
Pour red wine and chicken broth into the roasting pan, adding bay leaves and thyme.
Cover the pan tightly with foil and roast in the preheated oven for 1.5 hours.
Remove the foil and roast for an additional 30-45 minutes, basting occasionally, until the meat is tender and reaches an internal temperature of 145°F (63°C).
While the lamb is roasting, prepare the goat's cheese mixture by combining goat's cheese, chopped fresh mint, and lemon juice in a bowl.
Once the lamb is done, remove it from the oven and let it rest for 15-20 minutes before carving.
Serve the lamb slices topped with the goat's cheese mixture and garnished with additional fresh mint.
Enjoy with the roasted vegetables from the pan.
