Trini Style Chicken & Beef Pelau

It is often prepared for special occasions and family gatherings, symbolizing togetherness and celebration. Today, Pelau has gained popularity beyond the Caribbean, with variations emerging in many regions, showcasing local ingredients and spices.

Jalapeños provide heat with fewer calories, while bell peppers are milder and cheaper.
Wash and prep the chicken drumsticks and beef round cubes.
Chop half a large onion and cut two carrots into coins.
Combine thyme and scallion in a bundle.
Open a can of dry pigeon peas and a can of coconut milk.
Measure out 3 cups of parboiled rice, 1/3 cup corn oil, and 1/2 cup turbinado brown sugar.
Season the meat with green seasoning, all-purpose seasoning, chicken seasoning, onion powder, garlic powder, and minced garlic; massage the seasonings into the meat.
Heat a large pot over low-medium heat and add corn oil and brown sugar to caramelize.
Wait for the brown sugar to foam and turn an orangey color before adding the chicken and beef.
Cover the pot and cook until the water released from the chicken evaporates.
Once most of the liquid is evaporated, add the pigeon peas, coconut milk, 2 cups of water, rice, carrots, thyme, and scallion.
Cover the pot and cook for about 45 minutes until finished.
