Grilled Asparagus with Bearnaise Butter

Boil a pan of water.
Trim the tough ends off the asparagus by bending until it snaps at the woody point.
For a pretty presentation, trim the ends with a diagonal cut.
Plunge the asparagus into the boiling water and cook for about 3 minutes, adjusting time based on desired crunchiness.
Remove the asparagus from the boiling water and plunge it into cold water to stop the cooking process and retain color.
Drain the asparagus after cooling it in cold water.
Heat a grill pan until hot.
Lay the blanched asparagus in the grill pan to get smoky barbecue taste and color.
Leave the asparagus in the grill pan for 30 seconds, then shake the pan to move it around.
After a couple of minutes, check for grill marks on the asparagus.
Add butter and lemon juice to the pan with the asparagus and give it a shake.
