Cheesy Shrimp Quesadillas

Traditionally made with cheese and various fillings, they are often enjoyed with salsa or guacamole. Cheesy shrimp quesadillas add a coastal twist, showcasing the region's seafood bounty. Today, they are popular in many parts of the world, with variations to suit local tastes.

Canned tuna is less expensive and has a long shelf life.
Heat a pan over medium heat and add 2 tablespoons of olive oil.
Add 1 pound of shaved ribeye to the pan, season with 1/2 teaspoon of salt and 1/2 teaspoon of black pepper, and cook until browned.
Remove the cooked ribeye from the pan and set aside.
Add 1 tablespoon of olive oil to the pan and add raw large shrimp, seasoned with 1/4 teaspoon of Cajun seasoning and 1/4 teaspoon of black pepper, cooking until slightly opaque.
Remove the shrimp from the pan and set aside.
Sauté 1/2 of a purple onion in the same pan until fragrant, then add 1/4 of a green bell pepper and 1/4 of a red bell pepper, sautéing until fragrant.
Add the cooked steak and shrimp back into the skillet and reduce heat to low.
Add 3 tablespoons of Sofrito base and season with 1 teaspoon of chili powder, 1 teaspoon of onion powder, 1 teaspoon of garlic powder, and additional Cajun seasoning to taste.
If needed, add chicken broth to the pan to deglaze and remove any sticking bits.
In a bowl, mix together 3 heaping tablespoons of sour cream, 1 tablespoon of mayonnaise, 1/4 teaspoon of paprika, 1/4 teaspoon of garlic powder, 1 tablespoon of white wine vinegar, and diced jalapenos to create the quesadilla sauce.
Heat a skillet large enough for a burrito-sized tortilla and add canola oil, ensuring it is not too hot.
Spread the quesadilla sauce on one half of the tortilla, then add the meat mixture on top.
Sprinkle your choice of cheese over the meat mixture, using Mexican blend and mozzarella for a stringy texture.
Fold the tortilla over and carefully flip it to brown both sides evenly.
Repeat the process to make about three quesadillas, ensuring each is crispy on the outside and gooey on the inside.
