3 tbsp honey
50 ml whole milk
1/2 tsp baking soda
30 g salted butter
500 ml whole milk
60 g semolina
1/2 tsp vanilla
50 g unsalted butter
60 g berry sugar
200 g apricot jam
25 g unsalted butter
2 tbsp berry sugar
2 tbsp unsweetened cocoa powder
4 tsp water

Bring milk and vanilla to boil in a medium saucepan.

Remove from heat and gradually add semolina while stirring constantly.

Still stirring, put saucepan back over the heat, cooking until it thickens.

Leave to cool but stir occasionally to prevent a skin from forming.

While that’s cooling, cream together butter and sugar for the filling with a mixer until pale and fluffy. Set aside.

Preheat oven to 350 F.

In another saucepan, heat sugar, butter, honey, and milk until butter and sugar have melted. DO NOT BOIL!

Pour mixture in a bowl, add flour, baking soda, and egg.

Knead into a smooth dough and divide into 4 equal parts.

Cover dough balls to keep warm until you roll them out.

Roll out the first ball on a floured surface into a 1-2 mm thin square.

Place on greased baking sheet, poke with a fork and place in oven.

Bake for 4-5 minutes then cool.

Repeat with 3 remaining balls.

Beat the creamy butter filling with semolina mixture until smooth.

On one layer of cake spread half the filling.

Top with second layer of cake and add layer of apricot jam.

In a small pot, bring sugar, cocoa powder, and water for the glaze to a boil.

Reduce heat and cook for about 2 minutes more. Remove from heat and stir in butter allowing to melt.

Pour glaze over the cake and spread evenly.

Refrigerate cake overnight before slicing.
