Warm 120 ml of full fat milk and 80 ml of water in a pan.
Add 1.5 teaspoons of sugar and 16 grams of fresh yeast to the warm milk and water mixture and let it sit for 15 minutes to activate the yeast.
Add 1.5 teaspoons of salt and 210 grams of all-purpose flour to the yeast mixture and mix until a scraggly wet dough forms.
Knead the dough on a floured surface until it stops sticking to your hands and forms a ball.
Place the dough in a bowl and let it prove for 2 hours until it has a nice bounce back.
Roll the dough out and cut it into two portions.
Shape each portion into a rectangle and add a generous amount of a mixture of feta, emmental, and mozzarella cheese.
Fold the long ends of the dough over the cheese and pinch to seal.
Brush the edges with egg wash.
Preheat the oven to 230°C (446°F) and bake for about 15 minutes.
