1 tablespoon tomato paste
1 tablespoon chopped ginger
1 tablespoon chopped garlic
1 teaspoon turmeric powder
1 teaspoon coriander powder
1 teaspoon black pepper
1 teaspoon salt
1 tablespoon chicken stock powder
water
ghee
coriander leaves for garnish

Prepare all ingredients: cut chicken, carrots, potatoes, green chili, tomatoes, and chop ginger and garlic.

Heat ghee in a pan until hot.

Add sliced onion and sauté for 1-3 minutes until softened and turning brown.

Add chopped garlic and ginger, sauté together for 3-4 minutes.

Add spices: coriander powder, turmeric powder, black pepper, salt, and chicken stock powder. Mix well and cook for 1-2 minutes.

Add tomato paste and mix nicely, cooking until aromatic.

Add chicken to the pan and cook for 5-7 minutes, mixing well.

Add chopped tomatoes and green chili, cover for 2-3 minutes until tomatoes are softened.

Add potatoes and mix with chicken, cooking for 2-3 minutes.

Add carrots and baby marrow (kusa), and optionally pumpkin or eggplant.

Add water, cover the lid, and cook for 10 minutes.

Add bread on top of the stew, cover the lid for another 1-2 minutes.

Garnish with coriander leaves and serve.
