Roast sesame seeds in a hot frying pan, stirring constantly until golden.
Add 3 tablespoons of dried thyme to the roasted sesame seeds.
Add 3 tablespoons of ground coriander to the mixture.
Add 2 tablespoons of ground cumin.
Add 2 tablespoons of sumac.
Add 1 tablespoon of dried oregano.
Optionally add salt to taste and 1 teaspoon of aleppo chili powder if desired.
Store the za'atar mix in an airtight container.
