Combine the fine cornmeal, sugar, and salt in a bowl.
Add the water a little bit at a time while using an electric whisk to mix well.
Add the vanilla essence and mix until well blended.
Pour half of the mixture into a lined baking tray and use a pastry brush to spread it thinly across the tray.
Repeat with the second tray, ensuring the mixture is as thin as possible.
Preheat the oven to 150 degrees Celsius.
Bake the trays in the oven for 50 minutes, swapping them halfway through for even cooking.
Remove the trays from the oven and let them cool.
Break the cooled mixture into flakes.
Serve the flakes in a bowl with milk and a little sugar on top.
