In a small bowl, stir together 14 grams of finely ground flaxseed meal or chia seed meal with 75 milliliters of room temperature water using a fork until fully combined. Let it rest for at least 10 minutes until it reaches a gummy texture.

In a large mixing bowl, combine 112 grams of coconut flour, 2 teaspoons of ground cinnamon, 5 grams of baking powder, and 1/4 teaspoon of salt. Sift together until fully combined and set aside.

In another large mixing bowl, place 3/4 cup of very soft room temperature butter. Add 75 grams of brown sugar sweetener and beat together on low for about 10 seconds, then increase to medium and beat for about 1 minute until creamy.

Scrape down the sides of the bowl and add the flaxseed water mixture. Beat on low for another 10 seconds, then increase to medium low and beat for 30 to 45 seconds until fully combined.

Add 60 grams of keto maple syrup and 1 teaspoon of maple or vanilla extract. Beat on low for about 10 seconds, then increase to medium low and beat for another 30 to 45 seconds until fully combined.

Turn the mixer to low and gradually add the dry ingredients to the wet ingredients in small amounts, mixing until fully combined after each addition.

Once all dry ingredients are added, increase the speed to medium and beat for about 30 seconds until a smooth dough forms.

Scrape down the sides of the bowl and form the dough into a smooth ball. Test the texture; it should be slightly moist but not sticky. Adjust with coconut flour or room temperature water as needed.

Line a clean work surface with parchment paper and roll out the dough into a rectangle about 1/4 inch thick, or divide into portions and roll each out separately.
