1

Separate the white and green sections of the spring onion; cut the white section into small pieces and keep the green section for later.

2

Peel the outer layer of the Chinese broccoli (gailan) using a vegetable peeler.

3

Cook the dry noodles in boiling water for 2 minutes according to package instructions; drain and transfer to a dry cloth to remove moisture.

4

Add some oil to the noodles to prevent sticking together.

5

Heat vegetable oil in a wok and remove excess oil.

6

Pour the beaten eggs into the wok and swirl to form a thin omelet; flip and pan-fry the other side, then transfer to a chopping board and cut into strips.

7

Pour the noodles into the wok over medium heat; mix thoroughly with chopsticks to coat each strand with oil.

8

Spread the noodles into a thin layer and pan-fry until the bottom is lightly charred; flip and repeat this process about 5 times until all noodles have contacted the hot surface.

9

Prepare the stir-fry sauce by mixing light soy sauce, dark soy sauce, vegetarian oyster sauce, ground white pepper, salt, and a little water in a bowl.

10

Stir-fry the sliced onion, white section of the spring onion, and carrot in the wok with some oil until tender; push aside and add the Chinese broccoli, stir-frying until tender.

11

Remove the vegetables from the wok and add the mushrooms; stir-fry until tender, then return the vegetables to the wok and season with half of the stir-fry sauce.

12

Return the noodles to the wok, loosen with chopsticks, and add the remaining stir-fry sauce; mix thoroughly to distribute the sauce evenly.

13

Add the egg strips and green section of the spring onion; transfer to a serving plate and serve.
