Gather ingredients: flour tortillas, butter lettuce for a healthier version, Monterey Jack cheese, shrimp, garlic, olive oil, lime, Chipotle peppers in Adobo sauce, Greek yogurt, mayonnaise, ground cumin, salt, and honey.

Marinate shrimp by drizzling olive oil over it, adding minced garlic, and the juice of one lime. Cover with Saran Wrap and refrigerate for 20-30 minutes.

Prepare the Chipotle honey sauce by mixing sour cream and mayonnaise in a bowl. Optionally, use all Greek yogurt instead of mayonnaise.
