This dish reflects the island's rich culinary heritage, combining influences from Greek, Turkish, and Middle Eastern cuisines. Flaouna is cherished for its unique blend of savory cheeses and aromatic herbs, symbolizing festivity and community. Today, variations abound, with some incorporating different fillings or spices, making it a beloved treat enjoyed year-round.

Grate the special cheese for flaounes.
Chop the fresh mint.
Crack 18 eggs into the mixture.
Add sugar, semolina, yeast, and fresh mint to the mixture.
Add cinnamon to the mixture (controversial).
Mix the ingredients together until well combined.
Prepare the dough with unbleached white flour, adding a teaspoon of salt and ground mastic.
Mix the flour with ground nut oil and water until a workable dough forms.
Roll out the pastry with help from family members.
Assemble the flaounes and brush with beaten egg yolk.
Bake the flaounes in a traditional clay oven for about 35 minutes.
