Pumpkin Paleo Pancakes

1 cup Paleo Pancake & Waffle mix
1 cup pumpkin puree
1 tsp pumpkin spice
3 large eggs
1/2 cup water
2 tablespoons melted coconut oil

In a large bowl, combine the pumpkin puree, Paleo Pancake & Waffle mix, and pumpkin spice.

In another bowl, whisk together the eggs, water, and melted coconut oil until well combined.

Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.

Heat a non-stick skillet or griddle over medium heat and lightly grease it with coconut oil or cooking spray.

Pour about 1/4 cup of the batter onto the skillet for each pancake.

Cook for 2-3 minutes or until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.

Repeat with the remaining batter, adjusting the heat as necessary to prevent burning.
