In a large skillet, add diced bacon and turn the heat on medium.
Sauté the bacon until almost crispy, about 9 to 10 minutes.
Add shrimp to the skillet and sprinkle with Creole seasoning, ground sea salt, and freshly ground black pepper.
Toss the shrimp and sauté for 1 minute until almost pink.
Using a slotted spoon, transfer the bacon and shrimp to a bowl and set aside.
Add butter to the skillet and let it melt.
Add finely chopped celery and sauté for 2 minutes.
Add red peppers and the white parts of the green onions, cooking for a couple of minutes.
Add pressed garlic and sauté for 30 seconds.
Add flour, stir to coat, and cook for 2 minutes, stirring constantly to thicken the sauce.
Pour in low-sodium chicken broth, add Worcestershire sauce, a heaping teaspoon of hot sauce, and freshly squeezed lemon juice.
Mix the ingredients and bring to a boil, then reduce heat to medium-low and cook for 5 to 6 minutes, stirring occasionally until thickened.
In a pot over medium-high heat, add milk and ground sea salt, whisking to combine and bring to a boil.
Slowly add grits while whisking continuously.
Cover, reduce heat to low, and cook for 5 to 6 minutes, stirring often.
Remove from heat and add cheese in batches, whisking between each addition.
Return the bacon and shrimp to the sauce, stir well to incorporate, and cook for 2 minutes to warm up the proteins.
Spoon the grits into warm bowls, top with the sauce mixture, and sprinkle with the green parts of the green onions.
