Start with 500 grams of minced meat in a bowl.
Add 1 teaspoon salt, 1/2 teaspoon red chili powder, 1 teaspoon Kashmiri red chili powder, 1 teaspoon cumin powder, 1/2 teaspoon black pepper powder, and 1/2 teaspoon garam masala powder to the meat.
Include 1 teaspoon ajwain, 1 teaspoon crushed red chili, 1/2 teaspoon turmeric powder, 1 teaspoon green chili, and 1 teaspoon ginger-garlic paste.
Add 1 teaspoon papaya paste and 1/2 teaspoon kachri powder.
Squeeze the juice of half a lemon into the mixture and add 2 tablespoons of garam masala (optional).
Mix everything thoroughly and add 1 teaspoon of oil and 1 tablespoon of ghee.
Cover the mixture and let it marinate for 1 hour.
Prepare the coal for grilling without using kerosene, ensuring it is well-heated.
Once the coal is ready, set it up in the grill and place the skewers with the meat mixture on top.
Cook for about 20-25 minutes, turning occasionally to ensure even cooking.
Brush with oil while grilling for added flavor.
Serve hot with naan or paratha and chutney.
