Pour in heavy cream and bring to a simmer, stirring occasionally.
Add grated parmesan cheese and stir until melted and smooth.
Season with salt, black pepper, and a pinch of nutmeg to taste.
If using, add cooked chicken or shrimp to the sauce and heat through.
Drain the pasta, reserving some pasta water.
Toss the drained pasta with the sauce, adding reserved pasta water as needed for creaminess.
Garnish with chopped parsley before serving.
Serve immediately with extra parmesan on the side.
