Ackee and Saltfish

Cultural Context

Originating from Jamaica, Ackee and Saltfish is considered the national dish, traditionally enjoyed for breakfast. The dish showcases the unique ackee fruit, which is often paired with salted cod, a staple in Caribbean cuisine. It reflects the island's history of resourcefulness and the blending of African and European culinary influences. Today, Ackee and Saltfish is celebrated not only in Jamaica but also in Caribbean communities around the world, often served with fried plantains or dumplings.

1

Rinse off some of the salt from the saltfish.

2

Boil the saltfish in water for about 15-20 minutes, repeating this process three times to remove most of the salt.

3

Cool the saltfish under cold water to make it easier to handle.

4

Remove the scales and large bones from the saltfish, a process referred to as 'picking up the saltfish'.

5

Break apart the saltfish and wash it two to three more times to ensure it is adequately desalted.

6

Rinse the canned aki under cold water to remove the brine.

7

In a pot, heat some coconut oil.

8

Add all the chopped vegetables (black pepper, bell peppers, scotch bonnet pepper, thyme, garlic, onion, tomato) to the pot and sauté for about 2-3 minutes.

9

Add the saltfish to the sautéed vegetables without adding any additional salt.

10

Sauté the mixture for another 2-3 minutes, allowing the salt from the saltfish to flavor the veggies.

11

Gently add the aki to the pot, being careful not to break it up too much.

12

Add some black pepper to the mixture.

13

Gently mix the ingredients using a spatula, shaking it through to combine without mashing the aki.

14

Let the mixture sit for another 2-3 minutes to finish cooking.
