Huevos al Horno con Sobrasada is a traditional Spanish dish that combines the rich flavors of sobrasada, a cured sausage from the Balearic Islands, with eggs, making it a hearty breakfast option.

Ingredients

  • 4 large eggs
  • 100g sobrasada
  • 1/2 cup grated cheese (e.g., Manchego or Cheddar)
  • 1/4 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 1/4 cup chopped fresh parsley (for garnish)

Instructions

  1. 1Preheat the oven to 180°C (350°F).
  2. 2In a skillet, heat the olive oil over medium heat and add the sobrasada. Cook until it starts to melt and release its oils, about 3-4 minutes.
  3. 3In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
  4. 4Add the melted sobrasada to the egg mixture and stir to combine.
  5. 5Grease a baking dish with a little olive oil and pour the egg and sobrasada mixture into it.
  6. 6Sprinkle the grated cheese evenly over the top of the mixture.
  7. 7Bake in the preheated oven for 20-25 minutes, or until the eggs are set and the top is golden brown.
  8. 8Remove from the oven and let it cool for a few minutes before slicing.
  9. 9Garnish with chopped fresh parsley before serving.
