Prep the leeks by splitting them down the middle and washing thoroughly to remove soil.
Chop the chorizo and vegetables into roughly the same size pieces.
Heat olive oil in a pan over medium heat.
Add garlic and onions to the pan and sauté until softened.
Add the leeks and sauté until slightly colored, but not browned.
Season the mixture lightly.
Add zucchini and continue to sauté gently.
Add about 1 tablespoon of paprika for spice, adjusting to taste.
Add the chopped chorizo and cook for about 1 minute until softened.
Add tomato sauce (crushed tomatoes or sugo) to the pan and stir.
Let the mixture simmer for about 2 minutes.
Preheat the oven to 180°C (356°F).
Add parsley and pre-cooked white beans to the mixture.
Transfer the mixture to an oven-proof dish.
Make small wells in the mixture and crack eggs into each well.
Season the eggs lightly and drizzle with a little olive oil.
Place the dish in the oven and bake for 15 to 20 minutes.
