YEYEmain
6 servings
Servings4
1.5 cups chopped tomato
2 cups chopped onions
0.5 cup white raisins
2 cups long grain rice (Uncle Ben's)
1 tablespoon ground coriander
10 cloves
0.5 teaspoon nutmeg
0.5 teaspoon seven spices
0.25 teaspoon black pepper
0.25 teaspoon cinnamon
1 chicken (pre-cooked)
2 tablespoons olive oil
1 tablespoon butter
chicken broth (from pre-cooked chicken)
slivered almonds
pistachios
pine nuts
yogurt
1

Soak the white raisins in water to make them moist.

2

Chop 1.5 cups of tomato and 2 cups of onion.

3

Pre-cook the chicken with half an onion, two cinnamon sticks, two bay leaves, and water for about 1 hour to 1 hour 15 minutes until tender.

4

Rinse 2 cups of long grain rice and mix it with the spices: salt, ground coriander, cloves, nutmeg, seven spices, black pepper, and cinnamon.

5

In a large pot, heat 2 tablespoons of olive oil and 1 tablespoon of butter, then add the chopped onions and tomatoes. Cook for about 5 to 10 minutes until softened.

6

Add the rinsed rice to the pot and fry it for a minute before adding chicken broth.

7

For every cup of rice, add 2 cups of chicken broth. Bring to a boil, then reduce heat and cover, cooking for 40 to 45 minutes, stirring after 20 minutes.

8

Toast slivered almonds, pistachios, and pine nuts in a tablespoon and a half of butter until browned, then add the raisins.

9

After the rice is cooked, fluff it and let it sit for 10 minutes. Serve the rice topped with the pulled chicken and toasted nuts.
