This slow-cooked dish is known for its aromatic flavors and tender chicken, making it a beloved staple in Emirati households. Today, Harsiya can be found in many Middle Eastern restaurants around the world, showcasing its global appeal.

Cut the chicken into two pieces, removing the wings and other unwanted parts.
Wash the chicken thoroughly with water to avoid any bad smell.
In the washing water, add salt, vinegar, and lemon, then soak the chicken to remove any odor.
Prepare the pressure cooker with water and bring it to a boil while washing the chicken.
Once the water is boiling, add the chicken to the pressure cooker along with salt and cumin seeds; close the lid and cook for 1 hour.
After 1 hour, check that the chicken is soft; remove the chicken and set it aside, draining some excess water.
Wash and soak the rice overnight or for about 6-7 hours, then add it to the water in the pressure cooker with a little salt and 2 mag cubes; close the lid and cook for 30 minutes.
Once the rice is done, carefully remove the lid, ensuring not to lose too much liquid.
Remove the bones and skin from the chicken and add the chicken back to the rice, along with some reserved water from the chicken.
Close the pressure cooker and cook for an additional 15 minutes to soften the rice further.
Mix the rice and chicken together, using a cooking stick to ensure everything is well combined and soft.
Prepare the sauce by frying the cleaned chicken wings in a saucepan until golden brown, about 5 minutes.
Add butter to the saucepan, then chopped onion, garlic, and tomato; mix until the tomatoes soften.
Incorporate paprika, red chili, turmeric, black pepper, and cumin seeds into the sauce; mix well.
Add tomato sauce and peeled fruit to the mixture, along with water and dry lemon; allow it to boil for a few minutes.
Serve the dish with a spoonful of the sauce on top.
