1 small red bell pepper, finely chopped
1 small green bell pepper, finely chopped
1 small yellow or orange bell pepper, finely chopped
2 large Roman tomatoes, cored, seeded, and finely chopped
2 green onions, finely chopped
100 ml Vinegar, such as rice, apple cider vinegar, red wine, or white vinegar
100 ml extra virgin olive oil
50 ml water
1/2 tablespoon Oregano, fresh or dry, to taste
1/2 teaspoon red pepper flakes, to taste
1/2 teaspoon ground black pepper, to taste
1 teaspoon Kosher Salt, to taste
1 handful fresh flat-leaf or curly parsley, chopped
1 bunch basil, chopped, optional

Combine all the chopped vegetables (onion, bell peppers, tomatoes, green onions) in a medium bowl.

Add vinegar, extra virgin olive oil, and water to the bowl.

Season with oregano, red pepper flakes, ground black pepper, and Kosher salt.
